Lavender Lemon Drop Cocktail

This is a fun and festive – and fabulously delicious – drink to add to your spring repetoire. 

Just like the season itself, when the mood, and possibly the calendar, suggests it should be warm, but perhaps Mother Nature hasn't gotten the memo, a lavender lemon drop offers scratches the itch, just enough to offer hope of what's to come. 

If you wanted to make this without alcohol, just add lavender to the honey syrup and allow to infuse for up to five days. Omit the vodka, and keep the rest of the recipe the same. 

Lavender Lemon Drop Cocktail

This is a terrifically seasonal and apropos welcome cocktail for a spring party. Making a big batch the morning of your dinner party is always a smart idea, just don’t make this too far in advance otherwise the lemon juice starts to taste a bit tinny.

Makes: 8 drinks
Bartender Level: easy

 Ingredients:
  • 16 oz lavender vodka*
  • 12 oz fresh lemon juice
  • 8 oz honey simple syrup
  • 2 oz water
  • Lemon soda
  • Lavender sprigs and lemon wheels for garnish
How to Make It:
  1. Combine vodka through water in a large pitcher and stir to combine. Store in the fridge until needed.
  2. When ready, pour over ice filled rocks glasses, top with a splash of lemon soda, garnish and serve.
*Lavender infused vodka

Ingredients:

  • 1 750ml bottle vodka
  • 3 Tbsp food grade, dried lavender

How to Make It:

  1. Pour vodka in a one-litre mason jar.
  2. Add in the lavender.
  3. Shake the jar (and shake everyday) and store in the cupboard for up to five days, depending on how strong you like the flavour and the freshness of your lavender.
  4. Start checking after 24 hours. I usually only infuse for one or two days for a decidedly lavender note, but one that’s not overwhelming.
