Dark n’ Stormy

Summer storms can be complicated. Luckily this drink is not.

Toronto is tracking for the wettest summer on record.

Earlier this week, the city crumbled under the weight of nearly 100 millimeters of rain that flooded highways, closed parts of Union Station, shut down corporate buildings, and knocked out power to a good chunk of the city for nearly 12 hours in many cases.

In between the rainy days, we do have heat warnings and waves, the humidity cresting to 90% and pushing the temperatures to feel like mid to high 30’s°C.

With wild summer weather that’s both oppressively hot and ferociously rainy, it seems the refreshing cocktail of choice would have to be the Dark n’ Stormy.

A refreshing combination of spiced rum, ginger beer, and lime, this mix of Caribbean flavours is likely the work – once again – of those intrepid sailors who earned part of their pay in daily rum rations, needed limes to fight off scurvy, and ginger beer to settle the tummies when the seas got rough.

And it’s delicious on sweltering days – without or without sunshine. Rich spices from the sweet rum, a touch of heat and effervescence from the ginger beer, and uplifting tang from the fresh lime. While it can’t really be made ahead as a pitcher cocktail for a party, the three ingredients and straightforward recipe are simply enough to for serving to order.

Dark n' Stormy

Technically, a Dark n’ Stormy can only be made with Goslings Black Seal Rum, which has the trademark on this quick cocktail. In fact, lawsuits have been swift from the Bermudian distiller to any other rum company suggesting a D n’ S can be made with their rum. 

Makes: 1 drink
Bartender level: easy

Ingredients:
  • 2 oz spiced rum (Goslings if you don’t want to get sued)
  • 1 oz fresh lime juice
  • Ginger beer, for topping
  • Lime wheel, for garnish
How to Make It:
  1. Pour the rum and lime juice into a tall glass filled with ice.
  2. Top with ginger beer, garnish with a lime wheel, and serve.
